In answer to your question, most people would tell you to use AMD over Intel for gaming, due to the fact that you can easily overclock AMD processors.
I am currently using dual xeons with the EMT64 bit technology, running Windows 64x Beta. (I think thats the name of it, not really sure.)
I'd have to say that having used an AMD 64 bit processor and then using my set up, I would have to keep what I have. But then again, it all depends on what you are using the system for, I mostly use mine for 3dMax/rendering/heavy multi-tasking. I do use it for games as well, and I must say that it really kicks some ass.
Down side is the motherboards availible for dual xeons, the fastest ram available to use is only PC2700, albeit I have 4GB of it.
But it all comes down to your budget. If you have a rather small budget, AMD is the way to go.
