Can a bunch of computers connect via ethernet to a 24 port switch? With no server attached?

yes, as long as they have different IP address.

You would need to manually assign IP's though.

also if you didn't want to manually assign ip's to everyone's computer you could attach a router to the switch and allow it to give the computers an ip.
