I have a customer who is responsible for a school IT department and he has been having a significant LCD projector theft problem. The projectors have VGA and S Video connectors in use. Is it possible to use either one to check continuity to give an indication when the projector is unplugged to trigger an alarm?

No, I don't believe there is anything available like that, but what you could do is just get a Kensington lock. Most expensive electronics these days have a k-slot that can be used with a special type of lock. Even better, you could get one with an alarm:
