You mean after importing a PST? Cause you can't directly import an OST.
When you import a PST it will work as normal. Though you need to setup the mail account in order to receive any new email.

But, how will Exchange Server behave if I had to import the converted .PST file into Outlook 2010?
It will import the mail into whatever account you specify.
