I have just bought some 4GB (2x2GB) Corsair PC2-6400 XMS2 DHX RAM which is supposed to be C4 however my bios and CPUz say its timings are C5. I have never fiddled with RAM much do I just have to type in the correct timings in my BIOS? Also this RAM has 2.1v and I thought (when I built my rig several moons ago) my P5B mobo only supported 1.8v! Can anyone clue me in?

Most high performance RAM doesn't automatically configure itself to run at the highest settings. You have to manually set the timings and voltage in the BIOS.

Like Cromewell said, you just need to change it in your bios. Most board makes have your memory boot by default by JEDEC standards (1.8V). So what ever speed/Timing the memory runs at with 1.8V is what it will boot to.

Just bump the voltage to 2.1 and set the speed/timing.
