Not sure if this is CD/DVD or motherboard question...

Let's say I want my custom-build to have both CD/DVD player, and DVD/CD combo burner (for copying CDs & DVDs). Problem is the motherboard I want does not have enough SATA connectors, but does have couple IDE. Is there any problem using SATA connector for maybe the burner, and having the player on IDE (using a IDE to SATA adapter), or would that screw up the copying, or anything else? Also, do I need to match brands for the player and burner?

The answer to all of your questions is no. You will not have any issues mixing SATA/PATA and burner brands.

And don't use an adapter to connect SATA to IDE. Just buy an IDE drive.
