Overclockable?

What does that mean? Im buying I5 Processor that says it has overclockable ablities.
Another question im looking to get ATI Radeon HD 6870 PCI-E 16X 1GB DDR5 Video Card, Eyefinity 4 capable it says it has eyefinity i am looking into get double or triple monitors in the future but atm i have to stick with a single monitor will this still be fine to use?

The 2500k....The K means the CPU has its Turbo Multipliers unlocked for more overclocking headroom & flexibility.
