Printing in ubuntu.

Does anyone know how I can set my printer not to print in color, only black and white? I am trying to print a PDF and i have used evince and acrobat reader. Neither give me the option.

all that does is let me specify a certain time to print.

Also, if i want to print from something like FF, it gives me a grayscale/color option. Why wond PDF viewers?
