Can I install XP with an OEM disc then use it again to set up a RAID array? Or do I need 2 seperate discs to do this?

In order to setup a Raid 0 array you will need to do a fresh install of windows. If your talking about installing XP to a single drive and then later on setting up raid then yes you can do that. You will only need to call microsoft and have them activate your new install, since you can only activate once online with an oem version.

What would be the benefit of install an OS to one drive then adding another drive. Especially with RAID0 which won't have any back up. The purpose of RAID is to distribute an OS and files across two disks which will provide faster access times and with some RAID configurations a mirror. You won't get a speed advantage if the OS is installed first and a RAID0 doesn't have your drive mirrored.
