ok so im setting up my new computer i bought 7 1tb hard drives but only plan on using 6 of them in the raid.... ideally so i can have all the space id like to run raid 0 but if one crashes their goes everything... so performance wise and sacrificing the least amount of space raid 5 would be my best bet right or would raid 10 be better i cant really find much on how raid 10 works

RAID 10 stripes a series of mirrored drives, it's fairly fault tolerant in that you can lose a good number of drives assuming all the drives from a given mirror don't fail but you give up a lot of capacity.

For RAID 5 1/number of drives is lost to maintaining parity but you can only recover from 1 lost drive.

Performance wise, 10 is better on reads and 5 is better on writes.
