RAM channels

I am buying a new system based on an Asus z9pe-d8 WS dual-CPU Motherboard which is quad channel RAM per CPU. So thats a total of 8 RAM slots. I am intending to go nuts on the RAM and buy 8x16GB EEC-REG RAM sticks. But of course after all that hardware buying the money is low. So my question is that: Is it wise/stupid in any way to buy only one stick now per CPU and then later (meaning in the not so distant future, like two months) add more of the same sticks? or do I have to go like 8x4GB or 4x8GB first, and after an year of money earning discard them and buy more bigger sticks
-> Super expensive.. Does the lack of connected RAM slots slow down my system so greatly that it is not logical to buy only 2x16GB or maybe even 4x16GB for the first few months/half a year? And if someone knows some good-but-not-superover-expensive RAM that he or she knows to be compatible with this motherboard.

What are you planning on using the computer for? Most people tend to go way overboard on their system.
 
I am using it to heavy 3D modeling, rendering, animation and simulation. Big particle simulations reguire lots of ram and of course computing power. Also I'd like to have so much ram that when I leave my Computer simulating a heavy scene for a week I can still Access other programs and there is enough ram for like video/photo/web editing simultaneously. I know I might be okay with littlebit less RAM, but I am willing to spend money on it but I have to know if it will be possible to spend it in like 2 or 3 parts by upgrading more ram in addition to the old ones and not having to discard the old and buy all new bigger sticks.
 
I would buy it all now if you could. Always best to buy the all the same ram. Would hate to buy some and then it be discontinued.
