I read that 2 x 8 GB is more efficient than 4 x 4 GB.

I'm assume the performance isn't a huge difference?

I already own 8 GB, so should I buy the 2 x 8 GB or 2 x 4 GB for the 16 GB of RAM I want?
 
Define 'efficient'. The difference is within the margin of error. If you're OCing heavily then two sticks generally nets you a higher clock rate.

I'd get 2x8 for future expandability.
 
So if I wasn't OCing (which I'm not) 4 X 4 GB would be fine? I'm going to take you up on the 2 x 8 GB route though. EDIT: I just found out that the HyperX ram automatically OC itself to 1866.

Also, just a thought, I don't expect anyone to know the answer, but, do you think would DDR3 die out before 20 GBs of RAM is needed for gaming? Seeing as DDR4 is out now.

No. But the problem is you will have to change motherboard and cpu if you really want DDR4 memory.
 
Since you can fit 32 GB in most modern DDR3 systems, kind of a moot point.
Yeah, maybe I'm overthinking it. I'm just trying to find a reason to be cheap and buy 2 x 4 instead of the 2 x 8, but for $40 more, I guess it not really worth arguing with myself.
