SLI or a really nice single card?

I am on a ~$400 dollar budget for my new video card. Should I go with 2 $200 cards that support SLI? or would I be better off with one top-of-the-line card?

Getting one high range top end card would be better. Not many games benefit from sli, and sli is only good for really high resolution with anti aliasing and AS enabled gaming. The cost and the power used does not justify a SLi system.

Yeah for $US400, the best card to get would be the 512MB 8800GTS, I have a XFX alpha dog 8800GTS and the performance is amazing, I can play crysis at a resolution of 1920x1200 with medium settings. I would suggest you also get a better CPU if you are going to get that beast. I have a Q6600 and I have found that at stock speeds, my system is CPU restricted, its only when I overclock my processor to 3.4Ghz do I see the full potential of that card being realised.

I wouldn't touch the 8800 GTX ultra, that card is ancient man, it uses the G80 core, which is more than one year old. The best card to get at the moment would be the G92 512MB 8800GTS, I'm pretty happy with the performance of mine, it can play all newly released games at 1920x1200, it lags abit with Crysis on Very high, but even a SLI system will do that anyway, there isn't a system that can play Crysis on full at the moment.
