if i run 2 geforce 8600 in sli when they come out will i be able to plug 4 moniters into it using both the cards

yes, you can.though i don't think you can run it sli..you'll have to disable it.

what are pci-expresss x1 slots used for im going to have 2 of them on my motherboard 680i?

They're mostly unused for now.. network, firewire.. they may be utilized to their full potential later on in their lifespans.

quad sli cards plug into them, in addition to the x16 slot

If you want the advantages of SLI, then you cant use all 4 monitor outputs.

They're mainly used for add on cards and controller cards, which dont require lots of bandwidth.

i just looked this up, and turns out i was lying....

they do take up the x1 slot, tho, but don't plug into it
