How does software track time, aside from connecting to a server, if your internet was off how would they do it. I have a 30 day trial, on something, im pretty sure they dont run off of windows clock time, but i changed the time on my bios and it still didnt work. anythoughts on this?

I can't tell you how to break the trial but I can say that programs often hide a timestamp somewhere (usually in a registry key or a file somewhere on the computer). This timestamp tells the program when it was installed, changing your time and date will usually cause the trial to end immediately as a protection mechanism. Programs will use the time and date of Windows since it is more readily available (also, many old computers have wonky BIOS clocks so it wouldn't be a reliable way to track time.
