Suggestions for an Intel socket 775 processor?

Well that MoBo is only on a suggestion from the LMCE forums, If you have a better suggestion let me know and i will check its compatibility.

Product Description
This Foxconn 945P7AC-8KS2 features the powerful Intel 945P chipset and offers support for Pentium D, Pentium 4 and Celeron D processors

quoted from amazon so if u want a core to duo that mobos out of the question

Would a single core be powerful enough to run this strictly as a media center? Or should I get a board that supports core 2 duo?

I would definitely go with a Dual-Core Processor for the sytem you are building. I noticed a good boost in processing power when I went from a Single-Core to Dual-Core Processor.

A single core should be able to do it just fine, what more didja expect from a $25 motherboard? I'd look into the G31's. 45nm compatible for around $50!

I didnt expect much lol. I assumed a single core would be able to handle it, all considered, the most its going to be doing is running the dvr program and displaying whatever im watching at the time. Nothing real taxing but i want it to run without any hiccups. Ill see if the G31's are compatable with LMCE

2048, the description for the board doesnt mention any dual core support though. I like the price on that processor though.

According to this website (Geeks.com) they state this about the Foxconn 945P7AC-8KS2 motherboard:

"This Foxconn 945P7AC-8KS2 Socket 775 ATX Motherboard features the powerful Intel 945P chipset and offers support for Pentium D, Pentium 4 and Celeron D processors with a 800 MHz Front Side Bus (FSB)."

So the Pentium Dual-Core I recommended would likely work with the motherboard.
