What do drivers do?

Ok I probably sound a complete retard here. But what do newer drivers actualy change about the way a grpahics card runs. I mean say I had one that came with computer then got the catalist drivers what difference would I see?
 
sometimes they add functionality or improve it but most of the time new drivers are only made to support new hardware with no/very small changes to support for older stuff.
 
they basically tell the software(games) how to take advantage of the hardware, without them the games only know the basics. New drivers are released that usually address certain games, if you read the notes on a driver release it will say something like "improved perfomance in half life 2 with 7800 series cards", because the workers at nvidia found new ways that half life 2 can take advantage of features of the 7800 series cards.
