What does OCR mean?

Optical Character Recognition, it is often used to help people scan hand written documents so it doesn't need to be retyped.
 
Hi all !
I'm trying to use an OCR-software on my mac (PDF OCR X) and it asks me, in the conversion settings, to choose between "Soft wrap" and "Hard wrap" for the "Text wrap" in the Output settings. I'm not a native speaker and I don't know what that means. Anyone could help ?
