What memory should I use?

What're you using it for?? For a dual channel system (ddr2) i'd not go over 4gb, unless you're rendering or doing work like that, but for gaming it's not really necessary.
i'd suggest 1066 ram.
If you're just going the 2x2gb route *my suggestion* i'd get these http://www.newegg.com/Product/Product.aspx?Item=N82E16820231166 for $58 w/ free shipping.
If you insist on 4x2gb, then these http://www.newegg.com/Product/Product.aspx?Item=N82E16820231241 are just a little looser on timings (5-6-6-18 versus 5-5-5-15 on the others) are only $46 with free shipping (saving you like $25)
 
Using the x64 bit OS is good, you will find that the performance is a lot better than a 32 bit OS. But Like Mitch says, if you are not going to do any rending or video, Photo editing. Or CaDD programs then 8gb is over kill. Most programs will not go past 2gb's.
