What RAM ?

I need help choosing some DRR2 for a new build which I will use for work and watching movies in full HD. Here are some that I have been looking at:
Kingston PC2-8500 HyperX
Crucial PC2-6400 Ballistix
Corsair PC2-6400 XMS2
OCZ PC2-6400 Titanium

Will one of these be a good choice, or do you have any other recommendations. Thanks for any help.

All of those are good brands but it all depends on what the motherboard memory specs are. What motherboard are you using?

For Watching HD video, any kinds of RAM can be used as long as they're support with your motherboard.

Also need to know what CPU you have. No point in getting 1066 ram if you have an am2 cpu, you need atleast an AM2+ to run 1066 ram.

Out of those you list, the kingston would be first choice (if you have the cpu/board to support it) and then the OCZ ram. I personally do not like corsair, they aren't very good bang for the buck.
Find any G.Skill ram over there? I've had good luck with G.Skill, never a DOA stick.

I plan on getting a AMD 245.

Also, is it best to go for higher MHz or lower timings ?

Higher MHZ, to a point. 1066 at 5-5-5-15 is faster than 800 at 4-4-4-12.

The 240 is the better deal, save a few bucks(err, euro I guess LOL) you won't notice 100mhz-

Is the 240 better than the 245? I really don't mind paying the extra £5 for the 245.

The only difference is the 245 is 100mhz faster(2.9 VS 2.8ghz), which you would never really notice. Same thing though, the 250 is only a few bucks more for 3.0ghz.
