This is my computer right now.

AMD athlon 64 3500+ overclocked from 2.2 GHZ to 2.6 GHZ
Geforce 7300GS
512MB of DDR2 PC2-4200 RAM
And my mobo is a AS-rock AM2NF6G-VSTA

I was thinking about adding another 512MB of RAM
I was thinking about getting this one off ebay http://cgi.ebay.ca/ws/eBayISAPI.dll?...8660&rd=1&rd=1

Would it work? It shoud because it has the same specs. 240 pin. But I was wondering if I would be able to run dual channel? And even if I couldn't, what kind of performance increase would I gain? I am using this computer for gaming and right now I can get alright FPS with medium settings in most games such as NFS carbon and half life 2.

Upgrading your RAM would help a lot with load times, but it is really your graphics card that is holding you back as far as FPS goes. Both your memory and your graphics card need to be upgraded to make a good gaming computer.
