Which graphic card is running and what do I need?

I never had two graphic cards in one computer, in some time from now Ill be purchasing a computer that has two graphics cards one for games(nvidia gtx) and one for working(nvidia quadro) I have no experience in the subject but how do I know which graphic card is doing what, when I turn on my computer which graphic card is runnning by default? also when I play games how do I know the GTX is doing the task of running the games and not the Quadro? and the other way around too, how do I know when I am modeling in Maya and doing my video editing that the Quadro is the one doing that task and not the GTX?

Would I need two monitors if I have two graphic cards or can I run both graphic cards using one monitor?

I don't have time to answer all of you questions right now but I can tell you that generally speaking the card doing all the job is the one that your monitor is plugged into. Also yes you can use a single monitor for 2 video cards but if they're different you won't be able to use them at once (they can be both installed in your pc you just can't utilize them at once).
