Which PSU would be easy to use with the ZXT Apollo Black SECC Steel Chassis

Oh, then go with whatever you want, either one is a good choice. Although I think you would be better off with the OCZ.
 
I suggest PCP&C, Corsair, OCZ, and FSP PSU's.

I would get the OCZ 700w, i have it and its great. i have another 3870 on the way, so it'll be running crossfire + everything in my sig.

but if your running dual 3870X2's, i would get something like a 1k watt power supply.

Also... the OCZ Game X Stream OCZGXS1010 (1010W) can also support two 3870's but thats gonna set me back $260
