will the 520watt Corsair power an 8800 ultra?

For an SLI setup you want to step upto the HX620 or another heavier supply. With a single hard drive, a pair of opticals, and that model card the HX520 should work well for stock use.

Sorry to disappoint you but the corsair 520w isn't an underpowered psu like you said, it can beat even 700 watts models
 
Corsair and OCZ alike are good makes to begin with. No video card made uses 500w of power! Even the newer cards with 1gb of onboard GDDR memory and a super sized vpu don't draw that much. The consideration on going with a larger model is also based on the other hardwares in a build like having 3 or 4 hard drives, a power hungry cpu, and plans to oc alot. Agreed! That would be even more true there with any plans on ocing an SLI setup where you need something extra onhand. Despite the larger vpu one card alone run stock won't pound on a 500-550w supply.

Presently I'm looking at one of the new DX 10 Radeon HD 2600Pro model cards with the GDDR2 Asus model seen with a 600mhz core 1000mhz memory over the Sapphire models seeing a 400mhz core seen at http://www.newegg.com/Product/Product.aspx?Item=N82E16814121083 I know the current 550w supply will handle it but I'm still pondering on going with either a Corsair HX model or the OCZ GameXStream 600w supply.
