Any MCSE book series would proably be a good start, however, most of those will probably contain ~7 books (overview, Active Directory, 2000 Network Infrastructure, 2k Security, etc.), so it would probably be better if you knew exactly what you were trying to learn.
Also, since 2003 server is out now, any of the new MCSE books will be geared towards that instead of 2000.
The Microsoft Academic Learning Series are okay books IMO. Here's the ISBN to the Network Infrastructure Design book. That should be enough info for you to figure out what the other books are.
