As the title says. What exactly happens when the trial runs out? I did a search and found basically some aero theme wont work and updates wont work. Is that about it? I am building a new comp for gaming mainly. Will I still be able to play games, etc when the evaluation runs out? Thanks.

It will basically progress to the point of being unusable, you will get an activation notice in the bottom right corner, it will remove your desktop background, as well as other features such as ceasing updates.

Eventually it will become unusable, windows 10 is not really that expensive to buy.

Windows hasn't been unusuable without activation since the days of XP. It doesn't lock you out. You just get prompted to activate and don't get any Windows Updates.

In addition to not being able to customize the look and experience. The wallpaper goes black with text saying you need to activate, you can't change themes, login pictures, etc. It will still function though.

If we're talking about Win 8 (not 8.1) that sense is almost true. So many bugs that were fixed with updates will be annoying to you, especially if you game. To be honest, it's worth buying if you want to game.
