memory standard DDR2 1200?

The memory standard for the motherboard im getting is DDR2 1200. Do I have to use 1200?
No. The motherboard rating only tells you the maximum memory speed it can handle, you can use slower memory. DDR2-800 is probably the most common type of memory around, and the cheapest (which is what you want to get), I don't think any lower-speed memory modules are even manufactured for desktops anymore.

im probably gonna go with 1066 then

There's really no reason, if you can get DDR2-800 for cheaper you'd better off going for it. The extra speed of 1066 won't bring any noticeable performance increase, so unless you can get it for price of an equal amount of DDR2-800, it's a waste of money. Even the heaviest games/apps can't cap all bandwidth of DDR2-800 in dual-channel.
