It all depends on what your application of the video cards is going to be..
Some motherboards have two graphics card slots on them because you can use Nvidias SLi, or ATI's Crossfire, to split the load up in between the cards.
Most of the time, this shows the biggest performance gain at a higher resolution.
And yes, on video card can satisfy for gamin, High Def, and 3D modeling needs.
