Can this be done, people say I should use 6gb kit, but I don't think I will need that much.

Can't I just start of with 2 x 2gb? Then later if I need to upgrade just buy 1 x 2gb?
 
Well socket 1366 supports triple channel just like any other socket would support dual channel so your best bet is to grab 3gbs (3x1) of ddr3 or 6gbs(3x2). Another alternate would be too look into socket 1156 which supports dual channel. Have you started building/purchased any parts yet? What is your budget?
 
Are you going to be using it for gaming and where are you purchasing from? Also, do you need an os/monitor keyboard/mouse etc or just the desktop itself. Note that if you spend a bit less on a socket 1156 build you will have more money for a better GPU and the computer will be faster in gaming performance. Up to you though.

LGA 1366 supports both dual and triple channel, so it is not a problem if you get 4GB ram

Triple channel gives you small increase in performance

Then what's the go with everyone banging off 4g/b kits, it's the only one I can afford at the moment and I don't think I need 6g/b at the moment. So it's okay to use 4g/b kits (2 x 2gb)?
 
Yeah, but you may as well go with a 1156 socket + intel core i7 860. It will give you the same performance, but the motherboard will be cheaper.

It will be cheaper yes, but less upgradability seeing as how the new processors are meant to be on 1366 and how upgrading to triple channel can't be done.

There are pros and cons to 1156 and 1366, just lok into both. You can use a 2x2GB kit on either, BUT, you can't run 2x2GB and 1x2GB in the same channel on a 1366 board. You will have to run them in different channels, effectively making it the same as 2x2GB and 1x2GB on a dual channel board.

If you get a 1366 board and 2x2GB kit, when you have an extra bit of money, you can sell the 2x2GB kit and use the money from that, plus the bit extra, to get a 3x2GB kit, utilising the triple channel, and leaveing spare slots still
