Cached Sites

How is it possible to access a cached webpage which i have never been on before?

when searching on google, i have the option to click on the actual link or a cached version, despite never having clicked on that site before. how does this work?

The google cached page is something else.It does not use your browsers history.
The cached link means the page is stored in the google database the last time google updated their cache.If you do a random search of "How to kill your roomate" and the first page appears on it (i am sure you would never have searched this before) would be a page you have never been to.Open the page in cached mode in google you will be redirected to the page saved in the google server as it was a few days/month/years back depends when google stored it.You will also see a google header on the page with the search phrase highlighted
