Amount of ram for a home server?

I can't decide what would be best to pair with an Athlon II 245 or Sempron 140 and a 780L or 760g motherboard. 2GB Dual? 2GB Single? 3GB Single? 4GB dual?

I have no idea. The OS will be a Linux distribution, but I haven't decided yet.

The motherboard I will be using supports up to 1333Mhz DDR3. Here are links to the motherboards I am considering.

I have a few other things to ask so answer them If you want. I would prefer if you guys stuck to my main question though.
Should I buy an aftermarket Heatsink like one of those cheap Cooler Master tower ones?
What kind of hard drives should I buy? WD green, Seagate Barracuda, etc.?
Should I buy quiet case fans?
Can I underclock and reduce the vcore on the processor to reduce heat?

What will you be doing with the home server? I'd say at least get 2GB if not 4GB of memory, they're so cheap anyways.

As for your other questions. An aftermarket heatsink can make the computer run cooler and quieter, which is good if it's going to be on 24/7.

WD green is a good choice as it produces less heat and uses less electricity. Otherwise a regular hard drive will be fine too.

Probably, unless you want a loud computer on all the time. Just make sure you get good CPU and chipset temperatures.

You could but it could also reduce stability. I would suggest just leaving it at stock voltage and frequency.
 
It will pretty much be used for streaming media to my xbox 360 and storing backups. It would be nice If I could put it in a case that fit into out entertainment stand or whatever you want to call it. I am interested in TVersity for what I am doing.

I would go with the Athon II. You'll want to extra bit of power when viewing 1080p content. I built an HTPC for my parents that uses a Core 2 Duo E7200 (or something like that) with 2GB of memory and a nvidia 8400 GS. It runs flawlessly.

-My main purpose for this build will still be a home server though.
