Looks to me like the problem's with your W2K disc, is it genuine or copied? It doesn't look to me like that file is being copied properly or something.
Windows 2000 is NTFS, it's based on the NT kernel isn't it. It's NT 5.0. If you've been formatting your disk using FAT32 and the disk is over 32GB in size you'll run into issues.
Yeah once you can get Windows 2000 installed on one partition and XP installed on another and Windows 7 on another they should work fine. I wouldn't bother with easyBCD to be honest, it may or may not cause problems - or at least just get your multi-boot stable and working before you play with easyBCD.
