Vsync is driving me insane.

Right now i have a 2500k and a 580. When i play wow i get 60 fps most of the time but in stormwind i drop to 30 fps and i can see the difference. When i play games i can tell exactly when it has dropped to 30fps because when i whip the creen around in WoW or fps everything is choppier. So i started wondering why i was getting such bad performance from my two thousand dollar computer and low and behold vysnc and my 60hz monitor are the problem. When i was building my pc i did not know anything about vsync. Now that i am trying to start a youtube channel it is even worse as i am getting locked at 30 fps in almost every game and it drives me nuts. When i turn of vsync i get almost 200 frames in all the games and even 400 in games like tf2. So i come to you to ask if i should just dump my monitor and buy a 120hz one so that i can record with vsync on and stay above 100 fps? Please help me.

Why cant you record with Vsync off..?
 
I am recording to a separate hard drive. i have to record with vsync on because if i turn it off the screen tears. Sorry forgot to mention that.
 
Vsync syncs your FPS with your monitor's refresh rate. At 60hz, you're at 60 fps, and like you said, dropping below 30. Getting a 120hz monitor would probably make it worse, since it would be trying to get to 120hz and lagging even more.

Have you updated your drivers? Temps all right? What ghz is your i5 at? May try overclocking if you haven't already.

Vsync locks your fps at the same refresh rate as your monitor. 60hz = 60fps. This stops the screen tearing When your computer cannot handle that constant 60fps, it dips below and then you experience stutter and droppage with your framerates.

Getting a 120hz monitor will cause vsync to constantly try to run 120fps. You will experience stutter with that.

Its not stutter, its that i can see the difference in the frame. If i hate a 120hz refresh rate then my fps would probably never go below 60 right?
