After turning it off, my FPS increases, but the temperatures does not.
can be, some games will burn your videocards if you disable v-sync

I'm playing bf3 with v-sync, because without that I got a bit of lagg.

Do you think i should try overclocking my graphics cards a bit? Like increasing the Core and Shader Clock?
I never overclocked a sli setup. But why would you need to overclock? To benchmark? To get more performance in that? Then do this for 1 time and do it back to normal after. No need to overclock if you can play everything at highest...
i'm using the cable that came with my PS3. So its fine quality.If you have SLI 560 GTX, then you do not need to overclock but it might have something with your HDMI, monitor or DVI that make it look lag. If it is cheap video cable, you might will notice a lag on gaming.
Plus, overclock GPU is your risk.
What is your specs model for your model and what is model of your video cable?
Overclock and then find a good performance level, save that overclock in afterburner, and then use that for benchmarks and games that aren't maxing out.
