Spend less on the processor and get an i5 3570K or a 2500K, less on the power supply and get a Corsair CX 600 and then spend more on the graphics card and get an HD 7850 and spend more on the board too and get a Gigabyte GA-Z77X-D3H if going for a 3570K or a GA-Z68X board if you're going for a 2500K.
 
i7 2600 is overkill for gaming, you don't need 8 threads at all, 4 is enough. In gaming, the 2600 will perform exactly the same as the 2500K/3570K, so no need to spend the extra.

800W is totally overkill for a single card, you don't need that much power - a quality 600W like the Corsair CX 600 would be fine.

The HD 7850 is newer and faster than the 560 Ti, not to mention you can get 2GB models too, most 560 Ti's are 1GB, so the 7850s are more future proof and better for higher resolution.

You board you've specified is pretty low-end, you want a decent board for a gaming rig, the Gigabyte GA-Z77 and GA-Z77X boards are nicer than that ASRock one. Z77 is also a more performance-orientated chipset than B75 too.

If you're going to take an i5, then you can better spend your money for an hd7870 in case of the hd7850 if it's purely for gaming...
 
Idk why this forums has something against ASRock. It used to be a part of ASUS you know. The ASRock B75 is just fine...
