Is Xeon good for a gaming build?

Why? They're not "designed" to use ECC RAM, they do support it, but there is absolutely no harm or dwawbacks in using normal RAM with them.

(EDIT for awkward wording: Of course, they are designed for it, what I mean is that they're not designed to use ECC RAM *specifically*, it's just a feature that is disabled in their desktop counterparts.)

In mission critical services, this 'feature' is the main selling point of the device, buying it for gaming is like using a truck to go fast IMO.

That's just stupid. IDK about the exact prices elsewhere, but here you can get a Xeon anywhere from $50 to $100 less than an equivalent i7. I mean an equivalent i7 in that it's within 100MHz of the clockspeed, and has all the features of the i7 except the IGP. They're both just as fast. So for much less, you can get an equally good chip (minus the IGP) that supports ECC RAM - and it's like buying a truck to go fast? That analogy is so bad, I can't even begin to grasp how you came up with it. If merely supporting ECC RAM made the chip significantly slower, then it might make sense, but it doesn't.

Wrong again. the E3-1240v3 has no graphics. In fact none of the E3's do. And E3's take registered memory.
 
Yes. In fact, I said It's an I7 with out graphics and with the option for registered memory. Not a big deal, we all misread stuff from time to time :)

After looking I looked at the specific model you listed I saw it was essentially an i7 but if it's cheaper than the equivalent i7 then by all means. There's no reason you can't use it. The prohibitive factor on Xeons was the price (i.e. the E5s and E7s) and even the E5s are pretty reasonable now. And since you are going to use a discrete graphics card you really aren't losing anything.

Yeah, I plan on recycling my current GTX 560 TI. But will buy a new card latter. Maybe a 600 series card although a 700 series would be better. Maybe a GTX 760.
