Starting my next gaming PC build

So I decided to get going on my new gaming PC build this year. Found a nice full tower ATX case with lots of room & up to 6 3.5 internal drive bay slots & up to 3 disk drive slots in the front. For the hardware I'm thinking about going with an AMD Rysen 7 type of setup since I'm kinda on a budget & I hear AMD is almost as good as Intel & costs hundreds of dollars less than most boxed new Intel CPUs. For the motherboard I'm between Gigabyte & Asus. Not sure which is better but Gigabyte does seem to have cheaper price point & makes AMD compatible boards.

For a CPU cooler I'm between a low profile design or a basic design. For RAM I'm going with 8 to 16 GB of Corsair brand DDR4 sticks. I do want to try using a board with built in graphs but am opened to considering graphics card options if I had to. I'm mainly going to use this PC build for flight simulator stuff & some PC games like GTA 5 for mods. Windows 10 will be the OS. What are your thoughts & advice on this kind of project? I'm still kinda new to PC building & I've been out of the game for almost 10 years since my last build that failed last year. Been using a basic laptop I got for college in the mean time.

Get 16gb as its more future proof.

Not gonna happen with Ryzen 7 cpu. Only Ryzen cpu's that end with G have video on the cpu die and they are low end cpu's anyway.

Not in the consumer market.

What is your budget?

Again, what is your budget and what framerates/ graphics performance are you trying to achieve?

My budget is about $1,000. I want framerates that can handle games like GTA 5 well. Not exactly sure what that is but I'm betting its much higher numbers than your basic PC.
