OK, after doing a ton of research on this site, I've decided everything I will buy other than the PSU and will be purchasing within the next week or so. I'm looking for recommendations on which PSU to get with this system. I'd consider myself experienced inside of PCs but I've never actually built one from scratch. Here's what I'm getting...

OS: Undecided which will also affect the RAM purchase. I may have to go with XP because of drivers for my MIDI sound card. This PC will also be a studio.
Any suggestions on different cases, PSUs, WD vs. Seagate? I've had a WD for 6 years now with no problems so its hard for me to choose something else.
Is the GTS worth the extra $60? I'd hardly call myself a PC gamer (mainly because my current PC can't) but I'll start if I get a GPU that good. Even if I don't get deep into gaming, I like to future proof (hard to call anything future proofing nowadays I know) because I won't upgrade often at all. I'll probably have this exact same PC 4 years from now. Maybe a different OS.
