3 HD set up?

Hey, so im interested in setting up a RAID system with my hard drives but I had a couple questions. Is there a way to have a way for it to split the info like in RAID0 but also creates a back up. But not like RAID10 where it splits it into two copies of both halfs.
So to sum it up, I want to create a RAID set up with 3 disks. Two two split it like RAID 1 so its running faster. And the third one as a back up with all the info from both the other disks on it. And if this is possible, is it possible to use a smaller drive for the one disk backup? So say, I have the info splitting into two 1tb Hard drives and then have it backing up into a 250 or 500gb hard drive then switching it out when it becomes full. Just incase I lose one of the two splitting it. I know this is jumbled and probably doesnt make sence, but if you understand it, could you please help? And would it run faster doing that at all or slow it down? Thanks for the help.
