800 vs 1066

You will probably not notice a difference. Besides the 800 you listed has awesome load LED's on it!

Yes... you will notice the difference if you really are into games, or else not really. I'll take for the 1066 because it's cheaper and has more frequency.

I have had that exact Corsair 800 pair for several months now. It is very nice ram. I have it clocked to over 1066 and runs flawlessly. Of course you need to make sure the rest of your system can support it. Such as at least a 500W PSU. Good MB and everything else.
 
The difference between the two will be negligible in almost anything. Take into fact the difference between Pc3200 and Pc6400 in gaming benchmarks only shows difference in the magarin of error, and you'll see what I'm on about. Plus it's almost double for the 1066, Talk about a rip-off. :D
 
Both of those are bad choices for RAM, and if you were stuck between the two I would say go with the 1066Mhz RAM because it's cheaper. However you can find great DDR2 800 RAM for around $100-$130 that will be perfectly fine as well.
