ASRock Phantom Gaming 6 won't boot into windows 10 after BOIS update

When you upgrade bios, it usually puts all the settings back to default. So my guess is that possibly the SSD (assuming NVME) port is disabled. You'll need to go into the advanced settings tab and then click on storage configuration and see whats in there.
 
Have you tried getting into the bios instead of that boot screen? Start hitting F2 when booting. See if the bios can see the boot drive and turn off fast boot and see what happens.
