Are you referring to the side panels of the computer case itself? The obvious would be to limit the amount of dirt, dust, and other debris that gets inside the computer. It also helps protect the components from pets, kids, or if a drink spills it will be harder for the liquids to get in. I believe it also helps with grounding.
As for the humidity, if it is very humid then it's much easier for moisture to condense on the components and cause a short.

A component can never be too cool! 
(Unless it's been sitting in it's box outside, then you should wait for it to reach room temp before installing and using that component.)
