needs to run/maintain cards runninging in SLI and a water cooling system, or would that be separate from the power supply when hooked up ?

Good PSU's will do fine with dual Ultras

The Quattro 850W will have no problems either. Provantage also have the Quattro 1000W for $100 cheaper: http://www.provantage.com/antec-tpq-1000~7ANTS030.htm.

What cards are you planning on running in SLI? Either of the above PSUs will be fine for dual 8800 Ultras, as Intel's said.
