Would Symantec Anti-Virus cause that issue...I uninstalled it and the computer has not crashed since...

It looks like xtremegear psu's are crap. Run the machine awhile and see if it still bluescreens. Open the side of the case and see if you can see how many amps are on the 12 volt rail.
 
Not the first clue on how to check the AMPs...The computer has been running all day without any problems, I honestly am starting to think it was Symantec.

Well I still managed to blue screen the computer although this time was for NTFS_SYSTEM...not sure if thats related to my problems or not ill keep the antivirus off of the computer and see if that was a fluke

well while im waiting for the MB to get here ive been reading more and more online, a common problem is the GPU. I read it was worth running the "FurMark" test. It passed no problems so its not my GPU.

There is a sticker on the side of the power supply that lists all the ratings. Look for what the amperage says for the 12v rail. You may have more than one 12v rail so it will be listed as 12v1, 12v2, so on.
 
That is low amps for a 700 watt psu. From what I just found, that unit only has only 480 watts 38 amps on the 12v rail. Definately not enough for the 6870. Your gonna need a new psu.
 
Anything is possible but from what we've done already I would start with the motherboard.
