Alright, here we go. I'm going to be taking some components out of my present computer to put in this one. Here are the parts I’ll be taking out:

Will everything fit together correctly and run at the best potential? What else would you change? Will that PSU be able to run everything? Is that enough RAM to game on Windows 7 x64 sufficiently? I don't really want to exceed 800 dollars.. so nothing more expensive unless it's right around there

And then with the extra money, I would get a better case:

That comes out at $30 cheaper than what you put together and would be a hell of a lot better for games.

With that money, the power supply you picked is alright, however OCZ are by no means "excellent" power supplies. I would consider spending another $5 to get

for the motherboard, I don't see the point in spending $180 on a motherboard either when a $130 will do the job just as well. All you will lose out on is SLI so far as I can see, which isn't exactly a big loss as any decent single card will do anything you want.

for the case, it is a very good case for the price. However, it doesn't have side mounted hard drives which can cause problems, especially with very long cards, because of the cables coming from the hard drives, and the power cable from the graphics card

he choosen GTS 250, So I just assumed he want SLi.
 
 
I'd rethink the cooler, the one you picked only has 3 heatpipes, try this one (it has a really good fan too)

And there are better thermal compounds then arctic silver 5, like tx-4 from tuniq and and mx-3 (best thermal conductivity out of all of them) from arctic cooling.
