Can I get to real DOS mode in XP

I want to run Doom which runs in DOS so can I do this from XP and if so how?

short answer, no. You can run DOS box, or DOS itself in a virtual machine that should be good enough for those games.

But with that said, have you tried to just strait install them in XP? If they don't work, then you could try one of the 9* compatibility modes for it.
