Download a free program like SpeedFan or CPU-z for this.
Cpu-z does not give temp readings
If you have an Asus board you can use their PC Probe II which is one tool proven to provide accurate readings from the board's sensors. Sometimes one program or another sees a problem and gives false readings. The hardware monitor in the bios if your board has that feature gives direct temp readings there.
Another tool that provides cpu temps as well as a complete breakdown of hardwares and softwares too is called SIW. This one is good one to have for a variety of reasons and is free at http://www.gtopala.com/siw-download.html

I hate this question, I think it's one of those questions that there isn't a definate answer to.
To get the exact temps of the CPU you'd have to put a thermal sensor in there yourself and have it attatched to a digital thermometer.
My BIOS, Speed Fan, PC Wizard and Easy Tune 5 all say my CPU runs at 19c idle.
Core Temp and Intel TAT say I get 33c idle, do there isn't really any software that you can say is the best, just try a few out and use the temp that appears the most

i agree with you there mate...speedfan,Everest both give me the same readings all the time but when i look in my Bios my cpu sits at around 52c idle
i dont know which to trust..the Bios OR software.
but if the Bios reading was right then wouldnt i have overheating problems if it was 52c idle?

52C is a concern right from the start especially if seen with the hardware monitor! Sometimes the best softwares for reading temps will give off false readings either showing a higher or lower temp. But that's software too! Any software can see gltches no matter how good it is in general terms. You see glitches in Windows so why not 3rd party programs?!
Look at the cooling for the cpu there as well as that for the case. You may have to reseat the hsf with a fresh application of the thermal paste/compound used if needed. Any ocing there? Even for an old Socket A cpu with a stock hsf I never saw 52C idle.
