Okay, so getting it together, but I have a question about CPUs. I have a chance to get a 2700k for $240. I can get a 3570k for $249 new. It might seem like the choice between two monsters, but what would be a better chip. I do a lot of conversions (HD video) and play some games, so thread count is not really what I am interested in. I can turn off HT and clock higher and get the same effect, yes?

Edit, if it makes a difference it will either be paired with a GTX460 or HD 6870, 600 watt PSU and a P67 or my Z77 when it comes back from RMA and a coolermaster HSF.

I would probably go with the Core i7 2600K Sandy Bridge over the Core i5 3570K Ivy Bridge. The reason why is the Core i7 2600K supports HyperThreading. The Core i5 3570K does not.
 
I was under the impression that HD video conversion benefited from the extra threads.

But if not, then the 3570k. Higher IPC, overclocks better.
 
I'd go for the 3570K if you don't need the extra threads. For a start it's the latest generation, and then as claptonman said it overclocks better if you're interested in that, and it should run cooler too, has a smaller die (22nm vs 32nm).
