Constructing a New PC, help pls.

Good day ladies and gentlemen.

I am interested in constructing a new top of the line computer. I know my way around computers now, Ive worked with them for over 15 years now, my only problem is i am not updated on recent technological advances in computer hardwares. I was hoping I could turn to this forum for assistance on what I should do.

First and foremost I would like to mention that this computer will be running Microsoft Vista (though I cant stand it), and used mostly for resource hungry games such as Microsoft flight simulator X, the upcoming Spore (if it ever comes out), and also partially for Video Editing.

My questions to the public are as follows:

Should my computer be a quadcore or a dualcore?
Should my computer use AMD or Intel?
Should I use SLI technology?

1. I will say quadcore
2. No idea. New AMD K10 CPU is coming out on 19/11, don't know how it is performing.
And new 45nm from intel will out at Jan08.
3. Personally not using SLi, unless you have enough money to go for 8800 GTX SLi or 8800 Ultra SLi. Usually a higher end card will outperform 2 lower end card.
 
Well, for a top-of-the-line system...

Intel Quadcore is pretty much it at the moment. I know next to noghint about specific AMD CPUs, but...
If you plan on very heavy gaming, AMD is the CPU of choice; if you plan on very heavy multi-tasking, Intel corners that end of the market. (Edit: Just saw your need for video editing - Personally, I'd go with Intel.)
SLI gets mixed feelings. Some say take two mid-range GPUs, and others say grab the newest baddest GPU you can find and save some $ and room in your case.
