Controlling the cooling fans

My case fans rev high and low continuously when playing a graphics intensive game. When I look at Intel's Active Monitor during gameplay, it tells me the CPU temp is 124 F and zones 1 and 2 are around 115F. I've tried changing the sensor thresholds by increasing the upper limit in the hopes of tricking the fans into thinking they don't need to come on until a high temp, but that didn't work. Is there a way of controlling the RPMs of the fans via software or simply shut them off? Not that I want to toast my rig but i'm sure it can take higher heat ranges, it's seems like the computer is just being cautious. I currently have an ATX case with two 80mm ball bearing fans, the cpu fan, the fan on the graphics card, and an 80 mm pci slot fan right up against the graphics card drawing out some of the heat.

Any suggestions?

most case fans use a simple molex connector and arnt controlled by the heat of the gpu/cpu, so unless you buy a hardware fan controler there isnt much you can do about those. As for the CPU fan, you can try SpeedFan, some say it works for them and others dont. Im not firmiliar with nVidia cards, but if you have an ATI card then you can download ATI Tool and have it manually control fan speeds, for example you can set it so if the gpu temp is 50C, the fan will spin at 60%, 70C at 95%, ect.
